What is the difference between OFFSET printing and DIGITAL printing?

OFFSET printing is done on a press where the inked image is transferred (or "offset") from a plate to a rubber blanket, then to the printing surface.
Advantages of Offset printing include:
- consistent color quality, registration, and texture
- printing of larger quantities
- ability to print on textured papers
Disadvantages of Offset printing include:
- limited to black, one color, or two color only
- you need a minimum order for many jobs
- turnaround time is generally longer

DIGITAL printing is done on our Xerox 6060 printer where cmyk inks are heated and fused on to the paper inside the machine.
The advantages of Digital printing include:
- can produce multi-colored high-quality pieces
- can handle smaller quantities so you won't be charged a fortune to only run 20 copies.
- quick turnaround time
Disadvantages of Digital printing include:
- because it is a cmyk process we cannot match some Pantone colors exactly, including metallics and flourescents
- paper types are very limited to very smooth, non-textured stocks
- consistency of colors and textures sometimes varies
